These cookies have become a fall staple. Cream unsalted, softened butter (6.5 oz) with soft brown sugar (1 cup) in an electric mixer.
To this creamed mixture, add maple syrup (1/4 cup), vanilla (1 tsp), and one egg and beat until well combined. Mix in flour (2 1/4 c.) and baking powder (1 tsp). Then divide the batter in two portions.
Form two 1.5 inch diameter rolls. Roll them in chopped pecans (1+ cup) and set rolls on a cookie sheet. Put sheet in the refrigerator to chill the dough for 30 minutes. Preheat oven to 350 degrees.
After 30 minutes, remove pan and slice the roll dough for cookies. Place a half pecan on each slice. Place cookies in the oven to bake for 15 minutes.
Enjoy! Or, bring them to a party as I will do. They are delicious.
